Mexican Roll-ups

Preheat oven to 350* F.  Grease 9×13 baking dish.

10                   flour tortillas (9-10 inch in diameter)

Combine and place 1/3 C of this mixture on each tortilla:

2  1/2  C         cubed chicken or turkey (leftovers work great!)

1/2      C         sour cream

1  1/2  C         shredded cheese

1  1/2   t          taco seasoning (we use a tad more)

1 /2    can      mushroom soup

1        small     onion, chopped

1/2       C        salsa

1/4      C        sliced ripe olives

Roll up and place side by side in greased 9×13 baking dish.

Combine the following sauce ingredients and pour over rolled tortillas:

1            C        sour cream

1  1/2   t         taco seasoning (we use a tad more)

1/2      can     mushroom soup

Bake for 30 minutes.  Sprinkle with additional shredded cheese if desired.

Serve with:

shredded lettuce

chopped tomatoes

salsa

~

Serves 4-6.  Adapted from recipe on page 153 of Heart’s Delight.

Cubed pineapple is terrific as a side dish:)
