Something to Celebrate on Election Day 2008 ~ Homemade Oat Muffins

1  1/3 C all-purpose flour
3/4 C rolled oats
1/3 C sugar
2 t baking powder
1/4 t salt
1 beaten egg
3/4 C milk
1/4 C canola oil

In a mixing bowl combine flour, oatmeal, sugar, baking powder, and salt.  Make a well in the center.  Combine egg, milk, and oil; add all at once to flour mixture.  Stir just till moistened (batter should be lumpy).  Lightly grease muffin cups or line with paper bake cups; fill 2/3 full.  Bake in a 400* oven about 20 minutes or till golden.  Makes 12.

Note–Quick oats will work if you have no rolled oats.

    I’ll try to post the recipe sometime in the near future:) It’s from the old Better Homes and Gardens cookbook that I received as a high school graduation gift. Do you have one of those?
