1/2 C diced, cooked pork, chicken OR turkey
2 T canola oil
1/2 C diced mushrooms
3 C cooked rice
1 T chopped onion
1 C frozen cauliflower and broccoli cuts
2 T soy sauce
1 well-beaten egg (optional)
Brown meat in hot oil. Add fresh and frozen vegetables, rice, and soy sauce. Cook 5-10 minutes until vegetables are hot but crisp. Add egg; cook and stir 2-3 minutes. Serve at once.
Note: Ingredient amounts are suggestions. Vary according to your taste. Other vegetables may also be used, such as carrots and beans.
