Coffee Cake Loaf

Preheat oven to 350* F.space

Cream:

1 C shortening or butter

2 C sugar

Add one at a time, beating well:

4 eggs

Combine the following dry ingredients in separate bowl:

3 C flour

1/2 t salt

1 t baking powder

Add alternately to creamed mixture:

floury mixture (from above)

1 C milk

Combine cinnamon mixture in separate bowl:

2 T cinnamon

1/3 C sugar

Grease 2 bread pans*.  Put 1/4 of batter in each bread pan.  Sprinkle each with 1/4 of cinnamon mixture.  Top with remaining batter and remaining cinnamon.  Bake at 350* F for approximately 45 minutes.

Slice and spread with butter (optional) to serve.  Store in refrigerator up to 2 – 3 weeks (as if you would actually have any left:)

*In lieu of a bread pan, you may use an 8-inch square glass baking dish.  When one of my bread pans was temporarily missing, this substitute worked nicely.
